The romance here runs on a natural schedule. Sunset opens it — drinks at the beach bar, no booking needed, the sky doing the décor. Dinner follows at the water's edge: the day's catch and Swahili spice from Zatiny's kitchen, Kim's Northern-Vietnamese dishes from Duyên, both menus at every table, plated with the care of a kitchen cooking for one couple, not a conveyor of them.
The private dinner in the sand is the full version: a single table in the sand, candles and lanterns, a menu built in advance around your tastes, and the staff choreography running invisibly — which is why it carries the east coast's proposal record. Book it a day ahead through the reservation page or WhatsApp, tell us the occasion, and arrive when the light turns gold. Couples staying at the hotel often close the evening at the open-air cinema; couples visiting from elsewhere just get the long drive home to talk about it.
The stagecraft
How the perfect evening actually gets built
The choreography starts hours before you notice it. The tide table picks the hour the water performs best; the kitchens plan around the day's boats (the menu changes daily, so your special evening is cooked from that morning's catch, not a freezer); the butler walks the sand deciding where the table stands so the lanterns catch the ripples. Sparkling wine arrives cold, the cocktail list travels to the beach with you, and fresh-fruit smoothies cover the non-drinkers with equal ceremony.
Occasions get their own machinery: proposals rehearse quietly (ring logistics included), anniversaries earn the decorated table, birthdays end with a cake that was never on the order. Only April and May ask for flexibility — the long rains move the occasional table under thatch, where the romance frankly survives intact.
